Chop the onion very finely and fry it with the butter.
Add the chopped sausages and the well drained mushrooms, let it fry for 5 more minutes, and add a dash of white wine.
Add the rice in the sautéed and then put three times the volume of consommé than rice.
Let it simmer for 15 minutes, stirring from time to time and let the rice rest.
A thin layer of Torta del Casar is placed on top of the rice, which must be tempered (20º – 21º).
Grill in the oven or on the microwave grill and serve hot.
