Boil the potatoes (unpeeled) slowly in salted water for 25 minutes. Drain and peel the potatoes still warm, mash with a food mill (with the thinnest grid) and dry lightly in the casserole without stopping for a few minutes. Add the iced butter, cheese and warm milk. Rectify the seasoning.
